Designation : AOC VDN Muscat de Rivesaltes

Vintage : 2006.

Varietals :

Muscat Petits Grains : 80%

Muscat d’Alexandrie : 20%

Soil : granite and gneiss.

Vinification : short skin contact maceration and pneumatic pressing. Cold settling, low temperature fermentation.

Traditionnal addition (called « mutage » of pure alcohool (from grape) to stop fermentation and thus preserve aromas and sugar.

Aging : early bottling

Tasting :

Colour : gold

Nose : exotic fruits, pineapple notes

Palate : ample and refined

Serving temperature :12-14 (50 –54)

Served with : as an aperitif or with foie gras or roquefort cheese..

Also nice with pastries and sorbet

Keeping qualities: to be drunk in its newness.
