Designation : AOC Côtes du Roussillon Villages Caramany Vintage : 2003. Varietals : Carignan : 25 % Syrah : 50 % Grenache noir : 25 % Soil : granite and gneiss. Vinification : long skin contact maceration with the carignan varietal. Syrah and grenache are destalked, crushed and then traditionnaly vinified. Long lasting maceration (15 days). Thermo regulated fermentation Aging : Aged in tank for 6 months and then in barrel oak for 12 months Tasting : Colour : dark red, violet hues Nose : finely complex and intense aromas, with ripe black fruits, spices and blackolive notes Palate : round, powerful and yet elegant. Lingering finish Serving temperature :16°-17 (60 –66°) Served with : this rich and refined wine goes well with beef, boar or game. Keeping qualities: 7 to 10 years
