Designation : AOC Côtes du Roussillon Villages.

Vintage : 2005.

Varietals :

Carignan : 50 %

Syrah : 25 %

Grenache noir : 25 %

Soil : granite and gneiss.

Vinification : long skin contact maceration with the carignan varietal.

Syrah and grenache are destalked, crushed and then traditionnaly vinified. Long lasting  maceration.

Thermo regulated fermentation

Aging : Aged in tank for 12 months and then bottled.

Tasting :

Colour : bright red, violet hues.

Nose : fresh red berries, black currant, liquance and mineral notes

Palate : smooth tannins

Serving temperature :16°-18° (60 –68°)

Served with : assorted cooked meats, grilled meat, cheese.

Keeping qualities : 2 to 4 years
